Lobster Ravioli

I recently treated myself to the KitchenAid pasta roller attachment. I have been very excited to try it out and have already made spaghetti and mushroom ravioli (and that's only after two weeks of owning it!) Today, I was hosting some friends for dinner and decided to try something entirely new — lobster ravioli. After researching a bunch of different recipes, I ended up pulling elements from different places and ended up making my own concoction.
Although risky, I tried a bunch of new techniques that I had never before been brave enough to try. I boiled the fresh live lobsters, made a beurre blanc and used a ravioli tablet. (The tablet cost $12, and may have been the best $12 I've ever spent! — It really sped up the ravioli making process.) The ingredients that I used in this recipe include:

  • Fresh lobster
  • Shrimp
  • Shallots
  • Garlic
  • Marscapone
  • Ricotta
  • Flour
  • Egg
  • White Wine
  • Butter
  • Champagne Vinegar
